Cuban chefs cling to hope, serving humble fare amid shortages and endless blackouts

HAVANA, Aug 29 — Operating a restaurant in a country grappling with food shortages and frequent power outages appears an ambitious undertaking, to say the least. Since January, the imposition of a U.S. oil embargo has left Cuba without fuel for its power plants and vehicles, plunging once-bustling Havana into a state of desolation.

Yet, some daring chefs are persevering, desperately hoping that brighter days will soon follow. Dainel Castillo, a former restaurant owner, has shifted his focus to the domestic market, where fewer tourists are patronizing. He explains, "It's the Cuban people who are consuming now, who are eating, who are going out to eat." However, the demand remains minimal, with most patrons unable to afford his signature surf-and-turf dish priced at nearly 7 US cents.

To cope with the soaring costs of ingredients, he has resorted to using lard instead of expensive cooking oil, joking that Cubans have an innate knack for finding solutions. Daily power blackouts, lasting up to 30 hours, further complicate matters. Even upscale establishments like La Guarida, featured in the Oscar-nominated film Strawberry and Chocolate, now sit vacant.

Enrique Nunez, its 57-year-old owner, remains committed to keeping the doors open, performing music for passing patrons. Despite the grim reality, small indulgences like dining out remain a rare luxury for many Cubans.
