When selecting a fresh baingan (brinjal) from the market, there are several key indicators to look for. To begin, give the vegetable a gentle press. A high-quality baingan should feel firm but not hard, with the flesh offering slight resistance and quickly returning to its original shape. If the skin remains indented after pressing, it likely indicates the brinjal is overripe or starting to spoil.

Next, examine the skin's appearance. Fresh baingans should have smooth, shiny, and brightly colored skin—whether purple, green, white, or striped—depending on the variety. Avoid any brinjals with cuts, bruises, cracks, holes, or discolored patches. Additionally, inspect the stem. A healthy stem should be bright green, firm, and moist, as opposed to brown, shriveled, brittle, or dry. These characteristics can signal the brinjal has been harvested too long ago and has lost freshness.

Consider the size of the baingan. Smaller to medium-sized vegetables tend to be softer, have fewer seeds, and possess a milder flavor compared to very large ones. Large brinjals are more prone to containing a higher number of seeds and may be overripe. While minor blemishes don’t necessarily mean the vegetable is unsafe, wrinkled skin, brown spots, dullness, and a dry stem are all warning signs of aging and inferior quality.
