New Central bar Fello opens with a zero-pretence approach to late-night drinks

Renowned Hong Kong bartender Shelley Tai, who earned the Altos Bartenders’ Bartender Award 2026, has launched her second bar in Central – Fello. Unlike her previous venture Mius, Fello takes a more casual approach to late-night drinking, eschewing bar-side pretension. Open from 5pm to 2am on Monday to Thursday and until 12am on Friday and Saturday, the venue spans two floors, seating 45 on the ground floor and 35 upstairs, with standing room for mingling.

The warm burl wood, brushed stainless steel, and soft lighting create a modern yet laid-back atmosphere. The cocktail menu focuses on clean flavors and high drinkability, featuring simple yet distinctive drinks such as the Fello Paloma (tequila, jalapeño, agave, clarified grapefruit, and peppercorn) and the Pineapple Basil Smash (vodka, pineapple, yellow bell pepper, basil, and citrus). Milk-washed cocktails blend gin with ingredients like gyokuro tea, honeydew melon, yuzu, and anise for a smoother sip.

Complementing the drinks, Fello offers a selection of bar bites to keep guests satisfied, including an ikura shrimp sandwich with yuzu kosho, dill, wasabi; a tsukune chicken burger with ginger teriyaki sauce and confit egg yolk; and scallion oil tossed noodles. Fello welcomes patrons from Monday through Thursday, Friday and Saturday, making it a prime spot for those seeking a relaxed late-night drinking experience in Central.
