Forget ‘pan mee’: This Melaka favourite serves some of the best hand-pinched ‘mee hoon kueh’ around

Melaka locals have long cherished the simple yet delightful dish of handmade mee hoon kueh. Growing up in the city, writer CK Lim never encountered pan mee, the plain sibling of this delicacy. For his family, it was always mee hoon kueh, enjoyed in a soup during rainy days or as a dry version during warmer days. When ordering, customers must first place their order at the counter, a practice that contributes to the smooth service despite the apparent shortage of staff.

The one-man operation is run efficiently by the owner who handles the counter and drinks station, while another staff member serves the food and clears the plates.

Given the hot weather, writer Lim orders iced liong cha, an iced herbal tea to cool off. The restaurant, located in the commercial area of Kota Syahbandar away from the bustling Jonker Street, offers a local feel with long queues of regular customers and nearby families. The owner chats with regulars and teases the children, providing a warm human touch absent in chain eateries.

Iced liong cha and dry mee hoon kueh are ordered, with the latter being preferred as it's too hot for soup noodles. The dish consists of pork paste, meatballs, greens, fried shallots, ikan bilis, and the star ingredient - hand-pinched squares of dough. A poached egg is added for an extra touch.

The cook poaches the egg in the soup, surprising everyone with the unexpected surprise of gossamer threads of egg white. Mixing the dark soy sauce and fiery sambal well is crucial to ensure a balanced flavor. The noodles are then separated, with each piece toasted to perfection. The final dish is a harmonious blend of textures and flavors, with the right amount of heat to complement the refreshing iced tea.
