Karnataka tightens food biz rules, issues advisory

The Karnataka Food Safety and Drug Administration Department issued a comprehensive advisory to food businesses across the state, emphasizing strict compliance with safety and hygiene standards. This directive came after a three-day intensive inspection drive in Bengaluru, where 60 three-star and five-star hotels were scrutinized, resulting in the seizure of over 1,000 kg of food and other products for various violations.

During the enforcement drive, 30 teams collected 77 food samples for laboratory testing, uncovering issues such as improper labeling, misbranding, expired products, poor storage practices, unhygienic preparation areas, and inadequate segregation of food items. Notable seizures included 640 kg of mislabeled mutton, chicken, and fish, along with 276 kg of rotten vegetables, 45 litres of expired milk and curd, 12 kg of expired bakery goods, 67 kg of mislabeled cereals, and 49 litres of used cooking oil.

The advisory mandates that food premises must be clean and well-maintained, with food contact surfaces, utensils, and equipment cleaned regularly. Food handlers are required to wear clean uniforms, headgear, and gloves, maintaining high personal hygiene. All raw and cooked foods must be stored separately to prevent cross-contamination, with hot foods kept above 60°C and cold or frozen items below specific temperatures.

Proper labeling and storage conditions are essential, with vegetarian and non-vegetarian foods requiring distinct utensils and containers. Businesses must ensure their water is potable, undergo regular cleaning and testing, and provide clean toilets with adequate handwashing facilities. Pest control measures are mandatory, and waste must be disposed of through authorized agencies.

Non-compliance with these guidelines could lead to legal action, including penalties and closure of establishments. The department has instructed all food business operators to adhere to these standards, and inspections and enforcement actions will continue to ensure compliance with food safety regulations. The advisory has been circulated to district food safety officers for immediate implementation and public awareness.
