Javier Olleros, chef: “Cuando vino el inspector Michelin pensamos que era un visitador médico”

Javier Olleros, a renowned chef from Lucerne, Switzerland, and Amaranta Rodríguez from O Grove, Spain, unexpectedly encountered an inspector in their restaurant's dining room in 2012. They initially believed the mysterious man to be a medical visitor, but upon finishing their meal, it became evident that he was actually a Michelin inspector. This realization came true eight years later, in 2020.

The restaurant, Culler de Pau, boasts an impressive view of the Ría de Arousa through its large windows, and on certain days, one can even catch the setting sun. Olleros' father left home at the age of 15, an orphan, with a wooden suitcase to pursue his dreams in Switzerland. Amaranta and Javier, during their early days at Culler, quarreled over the phone because it was difficult to hear due to the poor quality.

Despite the mysterious nature of life and the dark rules that govern it, Olleros believes that sometimes work rewards the efforts put into it. Currently, seated in his greenhouse, surrounded by his own garden and a glass of wine, Olleros reflects on the invaluable experience of having a Michelin inspector visit his restaurant, acknowledging that it has indeed returned to him what he has offered.
