"account": "Lemon, oregano, and mint are key ingredients in a popular Greek family recipe for roasted chicken and potatoes. The dish is versatile, with whole roasted chicken or individual chicken portions used. Parboiling the potatoes before roasting ensures they cook through and become golden brown. Olive oil, butter, and lemon juice and zest are used to add flavor to both the chicken and potatoes. The chicken should be seasoned inside and out, with a skewer test to ensure the internal temperature is clear of pink juices. The dessert suggestion includes buttered peas or courgette slices tossed in olive oil, garlic, and lemon for a few minutes on a moderate heat.",
